Lactation-boosting cookies |

My sincerest apologies for neglecting the Baby Blog in recent weeks. I had every intention of keeping up the weekly posts, but I’d completely forgotten how time consuming raising a newborn is – and it’s even more so when there’s a toddler as well. My life seems an endless cycle of breastfeeding, attending to Tycho and short sleeps. I’m finding it mighty difficult to find time to even feed myself.
I did manage to bake some cookies a couple of weeks ago, which had me vowing never to bake again. It wasn’t the recipe’s fault. I’m not an experienced baker to start with, and my not-so-helpful toddler made the messy process all the messier.
However, the cookies tasted fantastic. What’s more, the recipe is supposed to help increase lactation in nursing mothers. I can’t say for sure that the cookies helped my lactation because I already have an over-supply and a fast-flow issue. But they’re extremely more-ish, so I thought the recipe was well worth sharing with you all. My only suggested change to this recipe is to increase the quota of chocolate chips. You can never have too much chocolate, I say.
Orion is doing very well, by the way. At just under 5 week’s old, she is getting quite chubby, feeding well and – most importantly – sleeping like a sloth.
Happy Easter everyone!

(care of Noel Pickett and The Bub Hub website)
Serves: 6 dozen cookies
Preparation time: 15 minutes
Ingredients:
1 cup butter or marg
1 cup sugar
1 cup brown sugar
4 tablespoons water
2 tablespoons linseed meal*
2 large eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats, thick cut if you can get them
1 cup or more chocolate chips
2 tablespoons of brewer's yeast*^ (be generous)
*can be found at any local health food store
*^ must be brewer’s yeast
Directions:
Preheat oven at 190 degree C. Mix together 2 tablespoons of flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) margarine and sugar. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the margarine mix. Beat until blended. Sift together dry ingredients, except oats and chips. Add to margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment. The dough is a little crumbly so it helps to use a scoop. Bake 8-12 minutes, depending on size of cookies.
